Welcome aboard, Brian.

To summit to iTunes, just fire up iTunes and click into the podcast section
and there is a big tile in the middle that says "Submit a Podcast." When you
click it you get something like the attached photo asking for your feed,
etc. It takes a few weeks to show up in the store.

If you don't have an RSS feed, then getting a blog setup is the easiest way.
Most of us use Wordpress and the Podpress plug-in to manage the iTunes tags.
You can also use dedicated tools like Feeder on the Mac to manage your feed.
